Aseptic processing of liquid foods containing particles

Based on its extensive experience in single pass coiled tubular heat-exchangers, Stork has developed a specific processing system for pumpable food products containing particles.

This Stork Sterifood system is based on coiled double tube heat exchangers in which the product is consistently pumped though the inner tube. The positive displacement pump is selected on product's viscosity and type of particles and modified to minimize possible damage to particles. Backpressure can be obtained either by means of an aseptic buffer tank or back pressure pump. For products with a heat sensitive carrier liquid "Sensitive Holding" Section (SHS) can be used.

The Stork Sterifood System comes in several executions each one designed for a specific range of products such as pasta sauces, infant foods, diced tomato, fruit sauces or soups.


Stork Sterifood with Selective Holding Sections

For products with a high concentration of particles, a tubular holding section is applied at sterilizing temperature. However for products composed of a heat sensitive carrier liquid with a low concentration of large particles, such as creamy sauces with mushrooms or asparagus tips, the patented Selective Holding Section (SHS) can be used.

Typically the SHS allows the liquid fraction to flow at high velocity but held for a short time with minimal residence time so being subjected to a short heat treatment comparable to that of an UHT-process.

The particles, which may vary in size, can be held in the main flow for preset times and are subjected to longer heat treatments so as to suit their relevant size.


Products

The Stork Sterifood System is suitable for the handing of pumpable products having the following characteristics:

 

bulletThe carrier liquid has a viscosity (at filling temperature) which lies between that of water and that of pouring custard or pudding.

 

bulletMaximum size of particulate:
- 25 mm (1") (industrial plant)

The application covers a wide range of products for the food, dairy, pet food and fruit-processing industries.

A pilot plant including aseptic filling facilities for product trials is available at Stork R&D Center.
